I've got several ideas for a fanfic or two. But...I was wondering. What are some tips that you guys have?
I tend to be really good at getting them started, but when it comes down to sticking to the story through to the end....I kinda veer off and don't finish it...Some advice?

Tips on what? Character creation/development? Plot development? Outlining? There are lots of aspects of writing to give tips on. Though the best general tip on writing is to write. Just starting writing stories out of your ideas. If it's good it'll be easy to keep writing, if not, don't bother. Otherwise you have to specify areas in which you would like to improve.
As for never finishing, that's a common problem. You could try setting up a schedule for yourself to update new chapters or something.

I agree with Arthryn. If you have trouble finishing it, set a tight schedule for updates and do your best to keep it.
If your problem is your plotline, always think three or four chapters ahead. If possible, the ideal would be to write a general plot beforehand, like Step 1: Eragon fights Murt on Burning Plains. Step 2: They win, Eragon travels to Dwarves and so on. The more detailed this is, the better your story will likely be, though havning no idea can also work.
As for characters, fanfiction is harder in that aspect because you have to stick to the writer's portrayal. I'd suggest you make a list of adjectives you think describe your heroes before starting to write, like some guidelines. If you can, write down even aspects of his personality, like 'hates violence'.
